We make it our goal to use as much local produce and as few additives and preservatives as possible in our meats. It is our belief that the tastiest food can only be made with the best ingredients, which is why we take great care selecting our suppliers. We like things simple, and we like them delicious. That’s why we hand-craft our meats.
Everything is hand made, from our award-winning fermented salami, pancetta and guanciale, to simple sausages, deli style and smoked meats. We make small batches to ensure we meet the high standards of quality we set for ourselves, and that our customers have come to expect. If we aren’t doing our best, there’s no point doing it at all.
